1 cup pumpkin
2 cherry tomatoes
1 carrot
2 cloves of garlic
1 onion
1/2 tablespoon fresh ginger
1/2 teaspoon turmeric and saffron
1 sprig of rosemary
1 tablespoon of extra virgin olive oil

  1. Start preparing the soup by chopping the vegetables: peel and chop the potato.
  2. Wash and carefully clean the carrots, then chop them.
  3. Peel the pumpkin and dice the flesh.
  4. Peel and chop the ginger.
  5. For best results, peel the cherry tomatoes and dip them in boiling water for a few seconds to make the process easier and faster.
  6. In a non-stick pan, heat the extra virgin olive oil with the garlic.
  7. Add the carrots, pumpkin, chopped tomatoes and potatoes.
  8. Add a little water, preferably hot, to cover the vegetables.
