4 eggs
30 g of stevia sweetener (or 70 g of brown or regular sugar)
350 gr of greek yoghurt, unsweetened (or any yoghurt)
40 g of corn starch
4 g of yeast or baking powder
Lemon peel
Vanilla essence (one teaspoon)


  1. To make the yogurt cake, separate the egg yolks from the egg whites.
  2. Add the sweetener to the yolks and beat with an electric mixer. Then add the Greek yogurt, the grated zest of half a lemon and continue to whisk.
  3. Add a few drops of vanilla essence, sifted cornstarch and baking powder and continue to mix.
  4. Beat the egg whites that we put aside and then add them to the yolk mixture, stirring slowly from the bottom up.
  5. Once all the ingredients are well mixed, prepare a 20-22 cm pan lined with parchment paper and pour in the mixture.
  6. Bake the yogurt cake in the oven at 170°C for about 30 minutes. Once cooked, remove from the oven and allow to cool to room temperature.
  7. When cooled, sprinkle with a little powdered sugar and cut into slices.
