Ingredients

  • 200 g of 00 flour + to taste for the mould
  • 75 g of stevia sweetener (or alternatively 155 g of normal sugar)
  • 4 apples
  • 2 eggs
  • 2 tablespoons of extra virgin olive oil (seeds are also fine)
  • 1 glass of milk
  • 1 sachet of baking powder
  • 1 knob of butter for the mold
  • Enough icing sugar

Preparation

  1. To start, break the eggs into a bowl, beat them with an electric whisk and, as soon as they start to get frothy, add the sweetener stevia (or sugar).
  2. Now stop, sift and add the flour, turn the whisk again, without stopping working, add the milk and let it reabsorb.
  3. Now add the oil and yeast, mix again with the electric whisk to obtain a mixture with a smooth and homogeneous consistency , then mix with the spatula.
  4. Once this is done, peel three apples, cut them into cubes, incorporate them into your dough, then pour everything into a floured and buttered round mold and garnish the surface with the remaining apple, peeled and cut into thin slices.
  5. Finally, sprinkle the surface with a little stevia sweetener (or sugar), then cook in a preheated oven for 40 minutes at a temperature of 180°C . At the end, remove the cake from the mold and decorate it with icing sugar.
