350 ml of milk
130 gr flour
3 eggs
50 gr of sweetener (or 100 gr of sugar of your choice)
1 tablespoon lemon zest
1 tablespoon lemon essence (or natural flavor)
a little butter for the pan (or oil)
icing sugar to taste.


  1. To prepare the creamy milk cake, start by beating 3 eggs in a large bowl, add the zest of a lemon, the lemon essence, the sweetener (or sugar) and beat with an electric whisk until all the ingredients are well incorporated.
  2. Then, while still beating, add the flour and continue beating.
  3. When the flour is incorporated and absorbed, stop the beater and add the milk at room temperature, continue beating for a few seconds. The consistency will be liquid, but will become nice and creamy when baked.
  4. Pour the mixture into a well greased (or oiled) round dish with a diameter of 16 cm and place in the oven at 180 C. Check the cake during baking, the time also depends on the type of oven used. If it is too brown on the surface, lower the temperature a little.
  5. When ready, remove from the oven, allow to cool and sprinkle with icing sugar before slicing and serving. For an even more citrusy flavor, sprinkle the surface with grated lemon zest.
